Simply Organic Cocoa Biscotti Baking Mix provides the rich flavor of Fair Trade Certified™ cocoa combined with wholesome brown rice flour. It's a taste treat that you can feel totally good about.

Ingredients: Organic rice flour, organic Fair Trade Certified™ cane sugar, organic alkalized Fair Trade Certified™ cocoa, baking soda, xanthan gum, lactic acid.

Directions: 1. Preheat oven to 300°F. 2. Empty contents of package into mixing bowl. 3. Add 2 large eggs (slightly beaten). Mix well. 4. Knead mixture as you would bread; add 1 to 2 tbsp. water if needed to bind dough. Dough shouldn’t stick to the working surface or your hands. 5. Roll kneaded dough into a log approximately 3 inches wide and 6 inches long. 6. Place on lightly greased cookie sheet and bake 30 minutes. 7. Let cool to touch and then slice like bread (3/4 inch thick). 8. Separate slices on cookie sheet, place on side and bake for 10 more minutes per side or until desired texture is reached. (Biscotti are typically very hard cookies).

Suggested Uses: * For a harder cookie, serve when cooled or make a day ahead. * For a sweeter treat, sprinkle still-hot biscotti with powdered sugar or dip cooled biscotti in melted dark or white chocolate or drizzle melted chocolate over the top.
