In Pre-Columbian times, chia seeds were a component of the Aztec diet as well as an integral part on religious ceremonies. The Aztecs also.used chia medicinally to relieve joint pain and skin conditions. Today, chia is best known as the rapidly growing sprouts "hair" from terra-cotta heads. In reality, these healthful, edible seeds are a better source of omega-3 fatty acids than flax seed (the fats that protect against inflammation and heart disease). While flax seed enriched foods have been driving the omega-3 trend, Chia's attributes show to be the true "Super Food" of today. In a side by side comparison chia and flax seed are both a natural vegetable source of omega-3. Flax's hull limits digestibility, so often ground flax is used in food products. Chia is easy to digest without having to be ground.

Grinding Flax makes it more susceptible to oxidation due to its high level of unsaturated fatty acids resulting in a six month shelf life.
